In honor of my upcoming birthday, I thought I’d share with you my absolute favorite cake recipe: Crazy Cake. I personally think it’s named thus because it’s so crazy delicious; or maybe because it’s so crazy-easy to make. My mother tells me the name is due to the fact that it doesn’t have eggs in the ingredients, which is odd for a cake. It’s possible she’s correct since I did, in fact, get the recipe from her to start with. Actually, I’ve been making this cake since I was a little kid, and now Olivia loves to make it – which goes to show you how easy it is. If a four year old and I can make this cake, then it’s sure to be a cinch. And it’s so yummy that you’re going to be snobbish about chocolate cake from here on out. Below is the recipe for the cake along with one for icing. (We actually prefer cupcakes, but that’s up to you.)
Crazy Cake
Ingredients:
- 1.5 cups flour
- 3 tbsp cocoa
- 1 cup sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp vinegar
- 1 tsp vanilla
- 5 tbsp vegetable oil
- 1 cup water
Directions:
Mix all the dry ingredients first (flour, cocoa, sugar, baking soda, and salt). For fun (especially if kiddos are involved in the baking process), draw a smiley face in the dry mix and then pour liquid ingredients into the indentations. Mix well. Pour into 8 inch pan (or 12 cupcake containers) and bake for 20 minutes at 350. Once cooled, sprinkle powder sugar on top, or use powder sugar icing recipe.
This recipe is easy, fun, and very kid friendly. (Obviously, adult supervision is necessary.) Kids especially like making the smiley face and then pouring the liquids for the eyes and mouth.
Powder Sugar Icing
Ingredients:
- 3 – 3/4 cups powder sugar
- 1/2 cup (1 stick) butter, softened
- 3 – 4 tbsp milk
- 1 tsp vanilla
Directions:
Mix ingredients in bowl until creamy. Spread on cooled cake/cupcakes. Top with colored sugar or sprinkles for added deliciousness. This is a fantastic topping for our Crazy Cake recipe.
