The weather is getting cooler and that has me excited for all the cozy things, like fuzzy blankets, steaming mugs of cocoa, and warm soup.  Admittedly, I usually “make” my soup from a can since I’m the only one who considers such things an actual meal.  (My hubby is a meat ‘n tators kind of guy and my daughter is ultra-picky.)  Not to mention, Campbell’s does a pretty good job, and frankly I’m kinda lazy.  Well, guess what…  I found a soup that’s easy to make AND my whole family likes it.  I know; I’m still in shock.

The other weekend, I was playing the role of sous-chef for a friend who was making homemade chicken noodle soup.  I was amazed at how easy the process seemed to be and also shocked at how tasty it was – because I’ve never met a chicken noodle soup that I actually liked, Campbell’s or not.  To further my astonishment, my hubby and kiddo loved it too.  Olivia even told me days later that she wished she could have some for dinner.  So, I asked my friend if I could have the recipe and share it on my blog as well.

Let’s get our cozy vibes going…

Chicken Noodle Soup

Ingredients

  • 1 tbs butter
  • ½ cup chopped onion
  • 58 oz chicken broth
  • 5 oz vegetable broth
  • ½ lbs. chopped chicken breast
  • 1 ½ cup egg noodles
  • 1 cup sliced carrots
  • ½ tsp basil
  • ½ tsp oregano
  • Salt & pepper to taste

Directions

Boil chicken until done, and chop into small pieces once it’s cooled.  In a large pot, melt the butter and sauté the chopped onion for five minutes.  Then combine all the rest of the ingredients into the pot and bring to a boil.  Simmer for 20 minutes.  Serve warm with crackers, and enjoy!

PS: The quote “Mmm, noodle soup…” is from Friends Season 5, Episode 18: The One Where Rachel Smokes.  You know, when Joey can’t get his lines right for the soup commercial?  Yes, I’m aware that I have a Friends obsession.  No, I don’t want help, haha.

PPS: The only reason I even know what the hell a sous-chef is also because of Friends, ha!
