A Side of Fiber with Your Chocolate Chips?
Chocolate muffins be damned – these are the best muffins around! This recipe is for one of my all-time favorite breakfasts, or anytime snack. And it is my humble opinion that they are THE BEST muffins EVER. I can’t really say that they count as healthy breakfast food, because who are we kidding? I don’t think the fiber outweighs the chocolate chips and the quantities of sugar… But if you want to declare them healthy, you do you!
Give this chocolate chip bran muffin recipe a try and I’m betting you’ll love them too. If not, bring them to my house and I’ll properly dispose of them for you!
Ingredients:
- 3 cups sugar
- 3 cups buttermilk
- 2 1/2 tsp. salt
- 3/4 cup vegetable oil
- 4 beaten eggs
- 5 cups flour
- 5 tsp. baking soda
- 1 package of chocolate chips
- 1 box (15 oz.) of Bran Flakes
Directions:
First, preheat oven to 350 degrees and place liners in your muffin pan. Next, crunch up the bran flakes just a bit by hand and mix all the dry ingredients together, except the chocolate chips. Then, add all of the wet ingredients in and mix well with a spoon. Last, add in your chocolate chips to the mix. (Don’t be deterred that it’s a gooey mess. They’re going to taste fabulous!)
Once your mix is ready, fill the muffin liners and bake at 350 degrees for 15 – 20 minutes, or until a toothpick comes out clean when tested. The recipe makes about 40 muffins. If you don’t wish to make them all at once, the batter can be stored in the fridge for a few days and baked into muffins later.
PS: If you wish to make a healthier version, use Raisin Bran Flakes instead, and hold out the chocolate chips. Or you can also substitute apple sauce for sugar, and pecans for chocolate chips. Note, these options might be better for you, but they’re not nearly as tasty, haha.
