Who doesn’t love a muffin? It’s like having a cupcake for breakfast! Probably it’s healthier though because there’s at least no icing… (But hey, no judgment if you like to eat actual cupcakes for breakfast, ha.) Anyhow, my aunt has shared this yummy recipe for poppy seed muffins with us, that I think you’re going to love. It’s one of her favorites! I made these at her house last time I visited, and I have to say, they were quite a hit. Check it out…
Ingredients:
- 3 cups flour
- 5 tsp salt
- 5 tsp baking powder
- 5 cups sugar
- 5 cups milk
- 5 cups oil
- 5 Tbs poppy seeds (dry)
- 3 eggs
- 5 tsp almond extract
Directions:
First, preheat oven to 350 degrees and pace liners in a muffin pan. Next, in a large bowl, combine all ingredients and mix/beat for 2 minutes. Then, pour mixture into muffin pan and bake for 20 – 25 minutes. Let cool and enjoy!
